Tomato & Green Beans Salad
- 1 1/2 cups of green beans
- 1 pint of grape tomatoes, quartered OR 2 cups chopped large tomatoes
- 1/2 cup Italian vinaigrette
- Blanch beans 1-2 minutes in a large pot of boiling, salted water. Drain; transfer beans to bowl of ice water. Drain.
- Combine beans, tomatoes, and vinaigrette in bowl. Marinate for 2 hours, uncovered, at room temp.
TIP: Chill if prepared more than 2 hours in advance, serve at room temp.
