Spinach Pesto w/ Almonds & Feta
Unlike traditional pesto, these hearty ingredients come together to provide a versatile spread that tastes fantastic over crostini, crackers, sandwiches, or even pizza. Even better, this combination of spinach with almonds provides you with a whole protein!
- 3 cups baby spinach
- 2 garlic cloves
- 1/3 cup almonds
- 1/3 cup feta cheese
- 1/4 cup olive oil
- Black pepper
1. Place the almonds and garlic in a food processor and pule until the nuts are coarsely chopped.
2. Add remaining ingredients and pules into a coarse pesto texture.
3. Keep refrigerated for up to 1 week.
