Quick Grated Root Salad
A wonderful way to use any root vegetables you may have. Eat alone or use as a tasty topping.
- 3 Radishes
- 1 or 2 Beets*
- 2 carrots*
- Use any combination of root veggies you have on hand
- Oil and Vinegar OR dressing of choice
1. Grate or shred all vegetables. Combine in a large bowl.
2. Add Oil and Vinegar or dressing of choice to taste and mix.
The longer this mix sits the more the tastes will combine.
