Easy Squash Bake with Tomatoes
This is a simple and healthy recipe for the summer when you have a ton of squash and tomatoes that you don’t know what to do with. Slice everything and throw it into the oven. An hour later you have a beautiful meal or side!
1 cup marinara sauce
1 small yellow onion, sliced
3 medium zucchini/squash/eggplant, sliced into half-moon pieces
3 medium tomatoes, diced
½ tsp dried basil
½ tsp dried oregano
1 cup shredded mozzarella
Salt + pepper
1. Preheat oven to 400 F
2. Spread ½ cup of the marinara over the bottom of a deep pie dish or casserole dish. Sprinkle onion slices over the marinara.
3. Spread a layer of squash over the onions, followed by some more sauce and some cheese. Repeat this process until you fill the dish.
4. Finish with another sprinkling of cheese and the herbs. Stir to coat the herbs and other ingredients.
