Easy Kale Pesto

Pesto isn’t just for basil; it can be made with practically any green or herb. Try out this simple kale pesto recipe for pizzas, pasta, meat, bread, or anything else that sounds good! 


• 1 bunch kale, destemmed, chopped into pieces
• ½ cup walnuts
• ½ cup parmesan cheese
• ½ cup olive oil
• 1-2 cloves garlic
• Juice from ½ a lemon
• 1 tsp salt


1. Bring a pot of salted water to boil. Boil the kale for one minute then transfer to a bowl of ice water. Cool, then squeeze as much excess water from the kale as you can.
2. Pulse garlic, cheese, and nuts in food processor or blender. Add kale, then stream in the oil while the machine is on. Add lemon and salt, pulsing once more. Taste and adjust as needed.
3. Serve over pasta, pizza, toast, or anything else!

Store in an airtight container for up to 3 days in the fridge, or freeze in smaller portions.
