Cilantro Lime Rice

Cilantro lends its warm, spicy flavor very well to dishes with acidic flavors like lime. Combine both together with the intense flavor of garlic scapes and have an unbeatable side dish for dinner any night of the week.


  • 1 tbsp. olive oil
  • 1 cup basmati rice
  • 1 ½ cups chicken broth
  • 2 tbsp. fresh lime juice
  • 1-2 garlic scapes, minced
  • Zest from one lime
  • ½ cup cilantro, chopped
  • 1 tsp. salt


1. Add oil to saucepan and heat on low. Add garlic and rice to the oil and saute for 2 minutes on medium heat, stirring frequently.
2. Add the broth*, salt, and lime juice and bring to a boil. Cover with lid and cook on low for 15 minutes or according to rice directions.
3. When rice is done, add lime zest and cooked cilantro and stir to mix in.
*If using regular long grained rice, follow the cooking directions on the box regarding amount of liquid to use and cooking time.
