Cabbage & Corn Slaw
- 2 tablespoons honey
- 2 tablespoons olive oil
- 2 table spoons lemon juice
- 1/4 small green cabbage (1/2 lb) cored and shredded
- 1 red or green bell pepper, thinly sliced
- 1 cup corn kernels
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- In a large bowl, whisk together the honey, oil, and lemon juice.
- Add in salt and pepper.
- Add in shredded cabbage, sliced pepper, and corn. Toss to combine.
- Serve and enjoy!
