Banana & Kale Muffins (vegan)

The texture and consistency of bananas make them the perfect addition to your vegan dessert. Kale makes these muffins even more nutritious, and is a fun way to add greens into your day.


  • 3 very ripe bananas
  • leaves of 3 pieces of kale
  • 1/4 cup canola oil
  • 1 1/4 cup sugar
  • 2 cups whole wheat pastry flour
  • 1/2 tsp. sea salt
  • 1 tsp. baking soda
1. Preheat oven to 350 F
2. In a blender, combine bananas and kale by pulsing a few times. Add in the oil and sugar and blend until smooth. Set aside.
3. In a separate bowl, sift together flour, salt and baking soda. Blend with wet ingredients until smooth and distribute into greased muffin pans.
4. Bake for about 15 minutes at 350 F until cooked through.
